Title: question to all - your favorite cheese making?

of all the cheeses that you have made so far what is your personal favourite and why ?

maybe i will start off and this will more than likely surprise you. for me the cheese i like the most is the 2% Alpine style cheese. it now has very good taste and the texture that i am looking for in a semi soft (?) cheese. it was made on May 28th so it did not take long. i can't imagine how it would be with some longer aging. this particular cheese was made using a two gal batch and pressed in a 8" mold and ended up being just over an inch thick at finish

will be making a few more of these wheels in the near future

Of all the ones I've made it is Cream Cheese as easy and almost fool proof ;).

But of all the cheeses I'd like to make it is Cambozola (https://cheeseforum.org/Cheese/Cambozola/Cambozola.htm)!

I don't know that I can narrow it down to one.
The fetta I am very pleased with considering I have just made it the way I have been trying for ages.  The cream cheese was sensational and dead easy.  The monterey jack that I just opened is also sensational, but they all have their different places, and I love them all.
I'm sorry, but I can't name just one.

I simply don't know yet as I am patiently waiting for most of them to age.  Other than that, it has been ricotta.
