Title: Ricotta Stuffed Meatloaf

I've religiously made ricotta out of all my whey, and the stack of packages in the freezer is mounting.  The wife made meatballs today and I decided to try putting ricotta in a meatloaf made with her recipe.  I used a frozen stick of ricotta and just formed the meat mixture around it and baked.  It came out very nice, sliced neatly and the ricotta contributed a nice texture.
