This cheese thing is good fun, but I tink I'm going to get a pH meter...

A pH meter is not the most important equipment for a beginner. Experiencing is much more important. I make very good cheese without it, even if the same type of cheese may turn out different from one batch to the other. We are making cheese for fun, aren't we? I've never tossed a cheese for being inedible.

I didn't expect so many responses to a n00b!
Poking around in the forum, I did find the sub boards for the different cheese styles. My interests (for now) and blue and hard cheeses.
Yes, experience! I'm sticking with cheap costco milk right now to just get the process down. I'm on cheese #7 or 8.... all not super successful, but all edible!
