Hi All,

Its so wonderful to find this forum. I'm also a newbie and in the process of setting up a cheese facility in one of the most beautiful places in the world . . . Himachal Pradesh, India, right in the lap of the majestic Himalayas.

I feel grateful and fortunate to be able to join this community.

Welcome, Sean!  What an exotic location!  Are you going to be using Water Buffalo milk?

Any cow's up there or just goat's?

Hi guys,

Yes i am up in the mountain. The climate here is great, the air is clean and the water is natural spring. What i have in this region is a good supply of the best quality natural habitat mountain goats and sheep. Even the cows milk here is very creamy (almost yellow) No buffalos here but they are plenty in a state called haryana a few hours drive away.

I am mostly inclined towards goat and sheep cheese.

Got a lot to learn . . . though.
