Title: Hello from Indianapolis IN

Hi, my name is Brad and I am a chef in the Indianapolis area. I am interested in learning how to make cheeses because I am an avid meat smoker and I would like to make my own cheeses to smoke. I know very little about making cheese and this looks like a good place to start.

Hi Brad!  I live in Bloomington and am just starting up a sheep dairy.  Will start small scale production next month but really looking at going full at it next season.  Would love to share information and cheeses if you are interested.
