Title: Brie "Florentine Formidable"

This is a delicious family recipe - I'm sorry that I don't have photos.

This is a little like a quesadilla in appearance but the filling is brie and spinach.  Very simple!

Ingredients:
Dijon mustard
4 10" flour tortillas
6 oz. brie cheese (rind removed ,room temperature)
1 bunch of fresh spinach leaves
olive oil
Aioli: Blend together 1/2 cup mayonnaise, 1 minced garlic clove, 1 tsp. lemon juice)

Spread a thin layer of Dijon on 1 tortilla.  Spread brie on the second tortilla then top with fresh spinach leaves.  Put the 2 tortillas together like a sandwich.  Heat olive oil on medium-low in large frying pan and brown tortillas lightly on both sides until cheese melts. 

To serve, cut tortillas into pizza slices and serve warm with aioli dip.  Enjoy!

mmm that sound interesting.  Unfortunately I don't think my brie is going to be edible, but I am definately going to give this a try when I next make it.
