Title: Here it is!! My first cheese!!

Here is my new pride and joy!  My first cheese.  Romano.  I am a complete newbie but took alot of information off of this site to help in its production.  A little dark mold on the outside but it seems to be tapering off a bit.  Please let me know what you think.  I am looking for advice and suggestions.  Also pictured is my cheese cave/ curing chamber with my babies in it.  Enjoy!!

It looks great Jlijoi! Congrats! A bit of brine and vinegar will clean up the mold too.

Ooooh it looks like mine! I plan on cutting into mine this week also.

How old is it?

Don't be in too big of a rush. If you cut it too soon, you'll be disappointed. Romano needs at LEAST 3 months to develop it's flavor. 6 months or a year is better.
