Title: Goat's Milk Powder
Post by: Sailor Con Queso on April 26, 2010, 02:40:57 AM
I do not have access to fresh goat's milk and the brands available in our grocery stores are all ultrapasteurized.  I am thinking of trying a goat's milk powder as a flavor additive. Anyone tried this? Good source?

I have also found powdered sheep's milk in New Zealand. They say it can be used to make cheese. Any sources?

I had a moderate sucess mixing 1 qt's worth of powdered goat's milk with 1/2 gal of whole cow's milk...i say moderate because there was definatly a powdered milk taste (was trying to make chevre) So if I were to do it again I would 1/2 the amount of powder. (maybe even less?)

I have not tried it on aged cheese...

It had a nice, tangy, chevre taste, however!

I can purchase Meyenberg powdered goats milk in many stores in my part of NY state.
I've used it a few times. It did seem to dissolve alright, although I was always finding little black specs in the milk afterwards.  Tasted OK to me as milk, but any aged cheese I was trying it in was awful because I had been over-doing the cultures and the rennet.
I know you can find their products on-line.
