Title: Nidelzeltli Cream Candy Making
Post by: zameluzza on May 04, 2010, 04:56:17 PM
So I had to much cream in the house and don't want to spoil it, so I try to make Nidelzeltli, with store bought cream it goes fast, but with home made cream *LOL*
1liter cream
1 kilo sugar
2 dl. milk
cook everything till the mass becomes light brown, in the book it sais 25-35 mintes... ya right!!!
I was cooking and cooking for way over 1 hr.
but it turned light brown *LOL* added 6tablespoon of cold water and pour it in a baking dish that was rinsed with cold water..
now I'm waiting for it to getcold and hopefully it turned out right...
took pictures, and tonight I will post it in my blog..
wish me luck they came out right, have such a craving for candy  ;D

Hehe....I kinda thought cream candy was an Idaho thing.....no one I know has ever heard of it outside my family!  My grandma used to make it every Christmas...now my mom does.  I suppose in a few more years, it will be my turn!

Does adding the cold water keep you from having to beat it forever?

nope it does make it shiny
in switzerland it's a big thing and I had such a craving,
but it did not turn out good, the taste is great, but they are way to soft :(

now I'm not sure if I just gonna eat it with a spoon or try to cook it again,

Everything tastes better when you eat it with a spoon!

What is the "dl" after the milk mean? I have made caramels with all of these ingredients as well as corn syrup but I would love to eliminate that from the recipe! So I will try this one...I take it to 248 degrees on the candy thermometer and it stays hard and softens when chewing....mmmm mmmm good! Just need to know how much milk to add.  Thanks, Maryann
