If you make cheese and want to have more time for other issues, like selling for instance, mechanising some of the time consuming/boring parts will give you that extra time. We have developed some simple equipment, running on air pressure. Have a look here for the piercer:

and here for the cheese cutter:

That cutter looks $$$$ what does it run?
Kind of kewl though. If you making tons of blues that would be worth it.
does it have an anti-gravity switch?
Looks like a nightmare to clean. I have thought about making a manual piercer using a circular disk from a poly cutting board with stainless spikes sticking out. Haven't gotten beyond the thinking phase. :o
Many thanks for all your reactions. In relation to it cleaning, the cutter frame and bottom plate can be removed easily for cleaning, the rest can be sprayed, brushed, whatever you feel comfortable with. Not too bad at all. You can see it in action here: Cheese cutter (http://www.youtube.com/watch?v=WEsd3m-EoPQ.#)

It does not have an anti-gravity switch, but we can perhaps offer it on a future model :)
Very cool, but this video shows cutting cheese not piercing.
The link below goes to the piercer. Here is it again.
