That all depends what type of cheese you want to make :)
You can make simple cheeses with just lemon juice.

Here (https://cheeseforum.org/Recipes/Recipe_Paneer.htm) is the one for paneer which uses the lemon juice. Queso Fresca (https://cheeseforum.org/Recipes/Recipe_Queso_Fresco.htm) is the same except it uses vinegar. I would start with these. Good luck.
