Made 4 gallon batch of Feta this weekend along with 8 gallon Chev and 12 gallon Colby. BUSY!

I am limited to 12 gallon batches until I get my new curd knife. Then I can go up to 22!

Livin' the dream. I love it :). Feta looks great!

[edit] From the surface texture it looks like it'll be just about perfect, crumbly yet still hold together and with that yummy fresh milk, should have a wonderful flavor.
