My first Emmental had such great eyes, now my second is not so much. I know the reason--I did not let it sweat enough--only two weeks. I became so worried that it would crack that I put it into the aging cave much too early. Good news is that it still tastes great--very creamy and nutty. Great melt. Aged in a dedicated rubbermaid container elevated above H20
