I'm one of those many idiots fools insane persons dreaming of opening my own cheese shop. Looking forward to learning what I can here.

By cheese shop do you mean a store or a cheesemaking facility?

Welcome to the forum! Where are you located? Different areas have different regulations for cheesemaking for sale. Be sure to check the local laws before starting anything that you won't be able to continue with.

This would initially be retail only.

Ideas:

Stage 1) A highly curated inventory of artisanal local/regional cheeses. Something like 50-60% of the inventory drawn from within 300-500 miles of the store (fortunate to live in a area with much cheesemaking ((upper midwest))), 20-25% other fine American-made artisanal then the remainder made of good representations of international cheese that the general shopper would expect like a good parmesano, swiss etc... plus a selection of charcuterie. All cut to order. Addiotnal possibility of prepping a very small lunch menu, possibly just a couple of sandwiches of the day, make, say 25 each, plus a drink... grab and go...

Stage 2) Expand eating option to farmers-table sort of setting...
Add an aging room/process and partner with local makers to age on-site.
Expand tasting and eduation options. Partner with a local chef to make charcuterie exclusive to the shop.

Stage 3) Expanded curation, aging and possibly making.

What's missing? Only the capital... LOL Just a dream at the moment.

Chris, welcome sounds like you are in upper midwest USA.
