You have a wonderful forum here. While I probably won't contribute a ton, I might have a question here or there. I am from Portland, Oregon moving to Los Olivos, California soon and I love to make cheese. I built my first cheese press a few days ago and I have a small fridge set up as a cave. It currently has a Manchego, a Cheddar, and a Gouda in it (I'm really looking forward to the Manchego). Here's pics. The cheddar looks ridiculous, I know, I made it before I had a proper mold and I'm very curious about how its going to turn out.

Thanks for the welcome everyone! I just finished another 2lber yesterday, an asiago this time. I think it turned out quite well, its air drying as we speak.

Thanks for the invitation, I'll let you know when we get there. I'll be working at the Midland School, come fall. Also, do you know anything about the Rinconada Dairy in San Luis Obispo? Any idea if they sell sheep's milk or another place around that does (crossing my fingers)?

I also recently joined the forum and have been blown away with the positive support and depth of knowledge represented in this forum - I belive it is truly the best resource any beginning cheese maker can have.

I have heard of Rinconada Dairy, but I've never been there to get any sheep's milk. I believe that they're in Santa Margarita, but I could be mistaken. I have a good goat milk resource in LO that I'll turn you on to.
Midland School is a great place. I know a lot of kids that went there are are now fine adults. They have a different approach. As for us, we did the public schools, Dunn Middle School and then home schooled from there out.
