I have tried to make horseradish cheddar w/out sucess. After reading your thoughts it seems that you can't use fresh horseradish - has anyone made horseradish cheddar and its willing to share how its done? Thanks
I've never done it, but I would use dried or powdered horseradish and add it to the curd before pressing.
I have. I've made it with powered horse radish and it was okay but much better with a dehydrated shredded horseradish and smoked. I kind of like the little bites of flavor from the shredded stuff the power is ... like the diffrence in drinking coco when you want a chocolate bar - the flavor is there but te texture is lacking. It is also good with red peppers and horseradish.
Thanks for the info, do you dehydrate the horseradish yourself or do you buy it that way? Also, I assume that you mix in the horseradish when you start cheddaring? and then put into the press. thanks for your help.
I can buy horseradish powder by not shredded horseradish. I use a food processor OUTSIDE and chop it fairly small then spread it out thin tin foil in my smoker. I like apple and cherry wood for the smoke. Apple gives it a hint of sweetness and cherry turns it red-orange so it shows up well in the cheese. If you have a dehydrator do it out side - it's REALLY strong and can take your breath away.
