Good morning
I recently joined this site and have been going over the various posts and content. Definitely a lot of information that will come in handy!
I was born and raised in SE Wisconsin but currently live in Lafayette Colorado with the hope of retiring back to SW Wisconsin. It is getting way too crowded here on the Front Range for my tastes!
I started making cheese this past spring so I'm at the bottom of the learning curve but slowly rising. So far, I've made mozz, brie, chevre, a cow milk cheddar, a goat milk cheddar (currently aging) and Tim Smith's crottin (also aging).
I'm part of a goat herd share program so I have access to goat's milk and will be focusing most of my efforts on goat cheeses.
I've already learned a lot from this site and appreciate all the information everyone has already contributed.

I'm over here on the Western Slope. (We call the Eastern Slope the Dark Side!) I have access to fresh cow, goat and, seasonally, sheep milk.
There is great info and friendly people here.
