I just made my first blue cheese (about 30 days ago). It is just starting to show a little blue. I am a little afraid to try it or serve it to friends. Does blue cheese go bad or does the "blue" chase away bad mold? If it does go bad, how can I tell?
I've only made 1 blue, but by day 8 it was completely covered in blue. How are you storing yours? Do you know if it's pretty humid or not?
