I've just made my first batch of Frankhauser's basic hard cheese. He says to wrap the cheese in a handkerchief - which I did - and to change it daily. Two questions: 1) if the handkerchief stays fairly dry, does it need to be changed daily? 2) Can't find any handkerchiefs to buy at the moment - I did find some white loose-weave terry cloth facecloths - can I use these? Thank you.
I believe you are supposed to use a fine muslin type cloth, thin and smooth. Muselina in Spanish
I wouldnt use terry cloth - too many nubs. As coffee joe says, something thin and smooth. It also doesnt have to have finished edges so you could cut up almost anything. Muslin, curtain material, sheets. White or very light in color so there's no color transfer.
DR Frankhauser used the hankerdhief to collect the wheys as it drys. Any, sterile clean lint free cloth will dobut I won't use terry it will stick to the cheese as it dries.
No appreciable weeping after 2 days - the bandages so far haven't gotten wet, or even damp, I'd say they were just a little less dry than when first applied. Could I have over-pressed the cheese? I did start getting some yellow (butter?) liquid seeping out under the hoop just before the cheese was released. Here's a pic before salting and wrapping.
You won't get as much weeping from hard cheese has soft cheese. Looks nice. This was the basic hard cheese recipe right?
I just made my first cheese today! The same basic cheese recipe from the wonderful Fankhauser. It was just put in the press.
"Flour Sack" tea towels work great for reusable muslim. They are smooth, tightly woven and are supposed to be lint free. In Canada you can find some at Superstore with all the other tea towels.
