We have a small herd of Nigerian Dwarf diary goats which we milk twice a day March-November and have tried making different cheeses probably about 20 different times. So far we've attempted Mozzarella/Ricotta and Chevre, as well as yogurt. Our results have been uninspiring since the end result tends to be pretty bland. Been using DVI cultures and following different recipes we've found online (Fiasco Farm) and in from books (Goats Produce too). Really hoping to be able to start making marketable cheeses or at the very least to stop having to purchase cheese at the store we can easily make with all the milk we have. Just purchased an EXTech PH110 so hopefully that will help. Looking forward to learning more and perfecting our recipes.
Welcome, you have come to the right place. The people here are very helpful and with their years of experience can help guide you to better cheesemaking. Search the boards for the cheeses you've already made and your answers may already be here. Also, the recipes on this forum have worked very well for me. Now that the weather has cooled down in New England it is a beautiful time to make cheese!

Yes, I've been keeping detailed notes on what the process and results were for each batch we've tried. I was going to shelve the old recipes since the result wasn't what I was looking for and start from scratch based on the recommendations on the board.
There are some excelent recipes here on the forum that members have had good results with - I'd try them first.
