Hi everybody... I have a little problem on my Cambozola. I have made three Cambozola's from raw cow's milk and two of them have developed a good white mold at day 6, but one of them has a few greenish spots on it. Why only one out of three?? Is there any solution in getting rid of this greenish mold?? Also, when flipping them this morning (day6) part of the mold / skin stuck to the bamboo mats. Will the mold grow back on the damaged area??
Johnny - make sure you flip your cheeses everyday so they don't stick to the mat. I have read posts about bamboo mats and some people don't like them for that reason. I use plastic craft mats, but still must flip everyday or they will stick to them as well. Sprinkle a bit of kosher salt on the bare spots and the white mold should grow back. As for the green mold, I would take a toothbrush dipped in some coarse kosher salt and some vinegar and gently scrub the area of the green mold, sprinkle lightly with the kosher salt, then leave it alone and see what happens. Hopefully, since it is still such a young cheese you have stopped the green mold growth.

Bonnie is right, just another thing, it seems that the green mold source is from the cheese itself and not some other contamination. In this case, this is only a matter of the look, although the taste may be affected as well.

Bonnie... I did flip the Cambo's every day, I think it's just those sushi mats are no good... Or they would have called them cheese mats instead! Nevertheless, the mould is growing back on the bare spots.... Yay!!! And the greenish spots seem to have gone and the mould is also growing back. Thanks for the help!!!
Johnny, glad things are going smoothly again. I don't know about those bamboo mats - they might suck more moisture from the cheeses than the plastic ones. I get the plastic craft mats at Michael's or Hobby Lobby here. I put them in the dishwasher and clean them which I think is easier than the bamboo ones?
I hope your Cambo's turn out well. I was really pleased with the ones I made this past summer. They have such a nice, creamy texture with that hint of blue in the middle! Maybe you could post some pictures of them when they are fully ripened?

I'm not sure if you have Walmart, but I got some plastic craft matting there.
