Title: Mold, Unwanted - On Pressed Cheese During Aging
Post by: Bowl on September 07, 2010, 04:46:08 PM
I have made a 4 gallon edam. It looked fine for about a week, but recenntly its had a few splodged of bluey-green mold, I wiped it off with some brine. Though I check it again about 2 days later and the cheese is covered in circles of browny mold and a very thin layer of fur in some patches.

What should I do?

Keep wiping it. Try a bit of salt in a bit of vinegar and stay with it.
