I assume you mean for cheese making, are you asking for recipes or suggestions on what cheese to make?
This booklet (https://cheeseforum.org/forum/index.php/topic,618.0.html) has some more african than Arabic type cheeses, who is your customer for the cheese, I suggest make what they like/want?
