If you are looking for one you can easily make, I might suggest a gouda..

The reason  ask is I am useing raw goat milk. I find the fresh cheese I make tastes great but as it ages it takes on a stronger taste. I like stronge cheeses but I am not liking the bitter taste I am getting.
I was looking for something very mild so as it aged if it got stronger it would still be tasty.
Maybe what I should be asking is what type of raw aged cheese do you all like from goat milk.
Tried the colby and while I like it young after 60 days not so much.
