Title: stacking?
Post by: kimlasavio on September 21, 2010, 04:46:51 PM
Hi all,  I have a mini fridge cheese cave and have made my first three cheeses - two cheddars and one caerphilly, all waxed.  Since there are only two shelves, I am wondering if I can stack waxed cheeses during the aging process in the cave or do they have to have space between them?  Thanks much,

Kim in California

ONce they have been bagged or waxed yes you can. Natural rinds no.

They should still be turned periodically though.
