Title: Cherry Tomato Salsa

Cherry-Tomato Salsa 
For those who love salsa i have a salsa recipe to share with you.Preparation time is 10 minutes and besides it is quiet healthy with the tomatoes in it.

Ingredients:

3 pounds cherry tomatoes - halved or quartered
1 large yellow onion chopped
3/4 teaspoon salt
1/8 teaspoom couese ground black pepper (to taste)
2 chopped seeded jalapeño pepper
1 bunch chopped fresh cilantro
1 teaspoon basil
1/2 cup lime juice
2 tablespoon balsalmic vinegar

Mix together - process in waterbath 20 minutes.
Toss ingredients together.Makes 6 servings

Oh, Debi, this is great. We are getting a little tired of all the tomatoes we are growing this year. I over-planted out of fear from last year's blight so now we are being overtaken by the beautiful fruit - every one is gorgeous and yummy. I've canned juice, sauce, whole and chopped. I made the lacto-fermented salsa but I was the only one who liked it. Now, this salsa recipe we can all enjoy. Thanks!

Great use for when you've got a lot of cherry tomatoes!  I don't have them this year, but will have to keep this recipe in mind.

You can also use regualr tomatoes but everyone seems to be loaded with cherries this year and this is just one way to use them up.
