sorry for taken long time to answer your qustions .
i have small manufacture to ,make cheese for normal pizza of restaurants.
the problem is  my cheese does not melting fast as the shife as want   . plus it has bad smell when leave it out the refrigerator in short time , some times less than 5 hours
