Title: Raw goat milk and hard cheese taste

I have not been having luck with my hard cheeses. I am using my own raw goat milk and find as the cheese ages the taste deteriorates.

It gets too strong and unpleasant. Not strong and OMG good.
Could it be the age of the milk, time of lactation or is it just a fact of raw goat cheese.
