Title: Blue mold temp question
Post by: Aris on November 12, 2010, 02:34:14 AM
Is 40f cold enough to slowdown the growth of the blue mold? I have a blue cheese currently aging at 40f and 10 days already have passed and still no sign of blue mold but there is white bloom growing. Does that mean the blue mold will grow eventually?

That is too cold for aging properly. 10 days is still a little early, but the blue should be the dominant growth.
