Title: Where to find a real 40kg/80lb parmesan mould?

I'm talking about those hoops described here (look at the pictures etc).

Anyone know where to get them? I'm guessing Italy. Wonder if those could be bought one-by-one somewhere...

I know, it would be a huge batch. Something I'm not likely to do in the near future.

However, I really want one...

Its not a mold but a hoop, a wheel this big is pressed by its own wight.
You can basically use any circular ring in the appropriate hight and diameter.
If you want to go traditional then I guess you will need to find an italian supplier.

Sounds like you could cut to size one of those large polyethylene drums.  Are you a body builder? Have you devised a pulley system for flipping it?!? In seriousness I ask, because while it would be cool to make a wheel that big, there are certain logistics to think about. You might also have a heck of a time trying to sell it.  It works for parmesan and a few famous large cheeses because they've been doing it that way for a long time.  A new cheese breaking into the market, smaller is safer.

I think they use mechanical turning aids nowdays to save in damaged backs and lower labor cost\increase production.

I'm sure they do.  I'm more concerned for Zoey or other small producers hoping to so a large wheel.  Something I'm sure she's thought about anyway.
