I have not started making cheese yet, I'm still putting together the ingredients and equipment. Hopefully I'll have my first batch started by the new year. We have a couple goats that we will be milking in the spring (knock on wood). I plan on using store bought milk to start with and then adding the goat milk to the mix.
My other fermentation hobbies include beer and wine making.

I too am new to this forum and to cheese making. It sounds really cool having a couple of goats that you can use eventually for their milk. Keep us posted how it goes.
I was thinking of Queso Blanco to start as I wait for my rennet and cultures to arrive. Great minds think the same way JohnnyB ;D, I just read you intro post.
