Title: White Mold Innoculant - Making From Store Bought Brie
Post by: misa on January 02, 2011, 03:24:57 PM
Hi!  I'm a total newbie and interested in making some Brie.  I understand that you can buy cultures for the Brie, but I was wondering if it is possible to use store bought Brie and grow a culture from that?  Kinda like you do with yogurt...  If anyone has any info or experience with this please let me know.  Are there any store bought cheeses that could work as a "starter"

Yes, you can. Type the word slurry in the search box and you'll find some posts regarding the process.

Just noticed this thread (https://cheeseforum.org/forum/index.php/topic,2888.0.html), in summary yes for the White Mold (Penicllum candidum), no for lactic acid.

Ah, correct, sorry I wasn't more specific, I was solely focqused on the rind.

I was also thinking the rind until I noticed that thread and reminded me.
