Title: Help needed: how much of candied ginger and mango per gallon milk?

Question to the people who made ginger mango stilton:
I got candied ginger and mango from Trader Joe's, trying to figure out how much to put.
I read somewhere on this forum "2 Tb of ginger", but since size of the pieces can be different it does not really make sense.
Would 50 gm of each be all right? More/less?
Any suggestions?

Mango is moist and really difficult to work with. It can easily ferment and ruin the cheese. 2 Tb of finely chopped Ginger is in the ballpark. More/Less? The flavor intensity is up to you.
