Not as yellow as I've seen, and the paste is otherwise a bit different from what I can tell, so just a guess - but Saint Marcellin?

Sorry the picture made it look yellowish but it's actually white...

Cheesie, what I meant to say is that many Saint Marcellins that I've seen are yellower than your cheese in this pic - but not all, many I've seen also have at least approaching this paste (admittedly, never this white, though; more cream than ivory, so I'm stumped, though, to be honest).

Yeah me too I can't figure out what cheese this is; it's actually not my cheese it's the cheese that the milkman does...I asked him if he knew the name but he forgot said he was going to get back to me lol.. he is impressive he is in his late 70's  and manages to roll out huge amounts of cheese...

The texture is rather crumbly like feta but the taste is fresh, it's not aged....

Anyways thats why I posted it here... thanks for your help though!

Lol....I was way off, then.  Saint Marcellin is typically gooey and unctuous, inside.

I think until he tells you more, you can just call it:

The MilkMan Cheese!

Looks like a simple Queso fresco to me.

Looks like edible, bordering on tastey, cheese to me.
;)
