Hello,
I probably should have started here before posting on the other topics :-p. Here's a Spanish student living in Ireland for many years now, studying cheese and making some at home too. Big fan of Manchego although haven't done any of it (YET), ewe's milk cheeses not so popular over here...only manufactued cow's milk cheese for now. I find this website incredibly useful! hope to get a lot from it  ;D

Hi Pat and welcome to the forum. I'm a big fan of Manchego also. What part of Spain are you from and did your studies take you to Ireland? I'm sure that you will find this forum to be a big asset to your cheese crafting-lots of knowledgeable people here and all willing to help.

Im actually a 'mature' student, food scientist and amateur cheesemaker ;-) food science is why I came to Ireland. Actually is there any Irish in this forum?

No, I'm in the states, in WA, on the west coast.

I'm jealous, I love the UCC program and people :). Paul McSweeney, Alan Kelly, Douwe, Gerald Fitzgerald etc, etc, too many to list. Top notch folks. Lucky :)
