Thought I'd say Hi. :)
I've made feta for awhile and this year have made Montasio, Gouda and cheddar.
All still aging.  I have two new presses.
One is a direct we ight type. The other is a dutch style that I just finished and haven't used yet.
I have tons to learn yet and enjoy reading the forums.

Thanks. I hope to try the press soon.  I think about 300lbs is within it's safe operating range.
That should be acceptable for  maybe up to 8" .  I got the Idea from pictures on this forum.
I added the posts on the top to allow smaller pressing weights and more increments.
10 pounds on the pulley = 135lbs add 5 on the top and your up to 167.
5 lbs by itself on the first post =42 10 = 60
5 lbs on the second post = 50   10 = 72

Howdy amblepath/Mike, welcome, nice press, good addition on the dowel posts for small weights / light initial pressing. I grew up in N Van but now in Houston, TX, where in SW BC?
