has anyone had experience using junket rennet ????
dose it work if so how well, i read that 4-5 times is required ??? ???
brent, nope no experience with Junket brand rennet.
But a New York US based Junket Webstore (http://www.junketdesserts.com/) has some recently posted (I don't remember them being 6 months ago) Cheese Making Recipes (http://www.junketdesserts.com/cheeserecipes.aspx) using their tablets.
Also, there was some discussion on tablet style rennet here (https://cheeseforum.org/forum/index.php/topic,527.0.html).

ok ,the junket rennet is branded "renco" here in a green box and is a liquid i think ???
No problems, just google it, legit product, box should have a recommended dosage, which you can vary up/down as required.
Just for other Kiwi's, which store did you find it at?
renco can be found at most supermarkets useualy in the desert or bakeing section. i have sent a query to the makers re the sutability for cheese makeing . see this link renco (http://www.renconz.com)
i got a bottle today (renco) it says 7mil per 10ltr milk for cheese makeing $2.20 nz dollars about $1.10 us

I used to always use rennet tabs, but I have found the liquid rennet to be much more reliable, and gives a better set.

NZ$22.50 ~= USD13.18 for just under a US quart, delivered! It's about USD25 plus delivery a 1/2 quart at this major supplier (http://www.dairyconnection.com/rennet.htm). That makes yours ~1/4 of our cost.
Then again 1 liter or quart would last you a lifetime ;D!
would allmost be worth you importing direct from renco at that price ;) ;)
I've just added them to the Cheese Making Supplies Webpage (https://cheeseforum.org/Links/Stores_Cheese_Making_Supplies.htm) and also noticed that they manufacture Lipase as well as Rennet, so anyone ordering from them could order both.

i tried it at 7ml per 10ltr and worked well am going to try a monteray jack next so hopein will be good for that tooo
Just a quick thread necro I have been using renco rennet for feta and camembert/brie for a while now and it works perfectly so not just for hard cheese.
After having trouble with my rennet purchased specifically from a Cheesemaking supplier I decided to give a cheap bottle of Renco Rennet a try just to get over the awful curse of no curd!
For $2.20, and purchased at my local supermarket, it worked perfectly! I have had a great curd and break since and I have had no troubles at all with both soft and hard cheeses.
I'm not sure how 'pure' it is in the eyes of professional cheesemakers but it's working for me so I recommend it.
Renco makes excellent rennet and it use used by many commercial cheesemakers (including myself).
