Title: "Drying Room" - 65%RH, room temp?

Sorry folks, I know I've seen various opinions on this, but looking for a quick opinion.  I was a bit late on obtaining a hoped-for wine cooler dirt cheap, to use as a drying cave prior to going into a main cave, maintained at 88-90%RH and 52-55F.  My hope was to create this second cave at 55F, 70%RH.  C'est la vie.

I do have the ability to humidify an entire room to 65%RH, and room temp.  Experts' opinions on the suitability for this as a workhorse post-brine, drying solution, for a variety of styles? (I tend to alpine, semi-firm to firm, in my love).  Thanks.

Great. General guideline is 70% RH, 62-65F

Many thanks, Pav.  These are sunbeam digitals, and we had one already on hand - they top out at 65%, so I was worried this was just a bit on the low end to prevent surface fissures, etc.
