Title: Cleaning ripening box
Post by: Caitedid on February 21, 2011, 05:39:14 PM
So, ripening brie in a rubbermaid tote in our cold laundry room.  Cheese is coming out beautifully, but I'm wondering what my best procedure is for cleaning the box out.  Bleach it and kill everything or just rinse to get rid of obvious funk while leaving P. colonies intact?  I noticed that the fresh ones I added to a box with some that had already bloomed seemed to bloom a heck of a lot faster than the ones that were put in a sterile box.  Thoughts?  Caite

While having is somewhat unclean and thus fast blooom of white mold, you could also get a buildup of unwanted molds and yeasts, my vote and practise is to just put in dishwasher.
