I'm excited to share that not all of my cheeses went kaput (like my poor colby:https://cheeseforum.org/forum/index.php/topic,6354.0.html (https://cheeseforum.org/forum/index.php/topic,6354.0.html)), and that some were actually quite tasty! I have two left to open, but so far, we've tried the muenster, a bandaged cheese and a waxed. The muenster was a bit salty, the waxed cheese had the best flavor but was rather crumbly, and the bandaged cheese looked the best but had a bit of the blue flavor, especially around the rind (which some of us didn't mind). Anyway, here's a pic of the bandaged after I opened it (this was aged 46 days.. I would've let it go longer but was concerned about it because of what happened to the colby).

Pleased with the results so far and looking forward to the last two!
