Title: Questions about using an electric chafer

I finally took the plunge, and got an electric chafer and an 8 inch pan. When I looked at the instructions for the electric chafer though, it said that it only goes up to 85 degrees. Though fabulous for meso cheeses, I definitely had my eye on some higher temperature recipes. My pan looks pretty identical to the one posted by DebiDJ a while ago, so I was hoping to get some input. 450 watts will give you more than 85 degrees. When you fill it with water and turn it to the max heat setting, how hot does the water get? Maybe it meant 85C?

Silly me! Of course it's 85*C. Thanks so much for reminding me, and the chafer does a great job holding temperature.

I am considering this electric chafer. What size pan (depth) is the chafer designed for?  Will a 6" pan sit all the way down into it?  I see you purchased an 8" pan with it.  How does that pan work having so much of the pan sticking up out of the water (heated area)?

I have one of those and it will get up to temperature fine. If you buy the flat lid use it upside-down when using 7 gallons of milk.
