Hey everyone,
It has been a while since I was on here, mainly dur to moving interstate (now in sunny queensland, where it rained and rained and rained just as I got up here). I am now living on the coast at Hervey Bay, next to Fraser Island, Australia. Before I continue on my cheese making adventures I would like to know whether or not a humid day is contraindicated for drying cheese, I think it is, I just want to make sure.

Good question, no experience as here in Houston during summer when very high humidity our houses are air conditioned.
I expect it could be a problem, if cheese stays especially damp during air drying after pressing, you could move to location with high air flow and if not ten to a de-humidifying type fridge. Make sure bottom has good air flow.
Off topic: Had to look up where hervey Bay is, looks great, when working and living in Brunei my family and I had a 2 week holiday in ~1999 to Brisbane and Gold Coast just S of you, great place, very envious!
