Title: Hey from La/Texas line

Just tipping my hat as I walk through the door.  I'm brand new to making cheese but looking forward to learning.  I live in a camp on the Sabine River in SW La but I can throw a rock (well almost) to SE Texas across one of the most beautiful rivers in the world.  Looking forward to participating.

Welcome . Hope you find lots of info and fellow cheeses here. Do you have your own source of milk? What kinds of cheeses have you made?

Thanks.  I haven't made any cheese yet.  I've got some friends with cows that have agreed to a trade (cheese for milk) and I hope to add a goat and sheep to my (very isolated) neighborhood this summer.  I'm really interested in making cheddar and would love to get a good recipe for hoop cheese.
