Title: Peppered Italian Smoked Beef

This is one of my favorites for an Italian sandwich. Lighly brined shoulder packed in spices for a week then smoked and sliced thin.

It looks amazing.
After being caught by the cheese flame, now i  am amazed at this beauty. It looks sooo good.!

I will have to come up with a recipe formulation for you. I don't measure for this one I grew up with it so it's a throw this in and thow that in kind of recipe. Next time I make it I will try to measure and hope it comes out right. The only thing I do different than my Mama is I smoke mine.
