Title: Farmhouse cheddar-What should it smell like after air drying?

Is it meant to smell good? It has been drying for over a week and has had some mould on it but all seems to be under control since scrubbing with brine etc.
It just does not smell desirable!? what are right and wrong smells?

I should have added I am using unpasteurized cows milk from the farm I live on
