Oops, forgot to introduce myself.
I am living, retired, in Germany although we also spend some time in N Ireland, where the milk is really really good.
At Christmas I received a cheese making kit as a present, which is a natural follow-on from my Butter and Yogurt making, and have been having a lot of fun ever since. Part of the present included a (small )supply of raw goat milk so there is a lot of learning taking place. The Raw Goat milk supply is not consistent but I am having no problem with store bought Goat and also Cow milk
So far, I have successfully made; soft Goat cheese ( probably correctly called American Neufchatel) , Cottage cheese, Ricotta, Feta and a poor attempt at Cheddar ( not patient enough to let it mature).
The learning experience is really enjoyable and this forum is probably one of the best there is on any subject.

Welcome, Henry! I really enjoy this forum, too. People here are so willing to help, support and encourage one another and there is rarely any negativity. So much knowledge, it boggles the mind.
It sounds like you've got a good start on cheesemaking - keep up the good work.
Welcome Henry/Harry, your English is great, very surprisingly I think you are our first member in Germany so I've just added you to our list of countries and added a Germany Geographic Board in case you or anyone has any local posts.
While you are first in Germany, the German language Board is quite busy, where in germnay are you at?

I got a cheesemaking kit for Christmas, too. I think it was really for my family than for me, they were just sick of me making feta, labneh & other soft cheeses. :P I suppose my second present was finding this site, as it has been really invaluable, with the recipes, the troubleshooting, the inspiration.

Thanks Steff for reminding me. The most important part of the cheese making kit that my son assembled for me was the link to this site. All the other stuff can be bought in many places and indeed I already had most of them like the thermometer, muslin, dried milk powder etc. There is no other site that has the wealth of knowledge sharing that this one has.
