I'm Mat from Goring in Oxfordshire, UK.
Just started making cheese - not really sure why but it seemed like a good idea so I thought I'd give it a go!
I've dived straight in and made the "big three" - a Cheddar, a Brie and a Stilton - but it's early days and they're only a month old, so I don't know how they're going to turn out.
Even at this early stage this board has given me a mine of information so looking forward to interacting more and, who knows, one day maybe knowing enough to answer someone else's questions!

Welcome, Mat. Not a Brit, but a fan of your beautiful land - took a brewery swing through your country, and spent good part of it in Oxfordshire (Oxford, Hook Norton) before heading into Warwickshire then to points north (ended up, finally, in Stoke-on-Trent). Best of luck with your makes.

John, I didn't know this. We had a great time in Oxford. There's a pub there memorializing the student uprising back in the 15th century, if I recall correctly, an uprising thar was wholly destructive and fully serious. Over the taxes imposed on ale. Now
those students had their priorities in order.
I loved England, can't wait to return.
Hey Mat,
I'm at the other end of the county near Banbury. I'm new to cheese making and have started with a mix of different hard cheeses. All seem to be going fairly well so far.

Hi Matt, and Thom - I'm not that far from you since I'm just west in Gloucestershire (Cotswolds at Cirencester). Would be great to share experience and the practicalities of making cheese!
