It's beautiful...and looks tasty too.   I bet it makes a great Alfredo!   How long did you age it?

Looks wonderful--what size wheel did you make? How long did you age it?

That was one of two 5lb wheels that I made.  Aged about 9 months and then got antsy to try it.  I ate half of one wheel and put the rest back for later.  So good!  Actually probably my most succesful cheese.
