Fromage is the French name for cheese, so I think you are refering to Fromage Blanc (white cheese) or Fromage Frais (fresh cheese).

I always found Queso Fresco (https://cheeseforum.org/articles/wiki-queso-fresco-cheese-making-recipe/) a quick making flavourful cheese. If want search the forum for Queso Fresco to get some other ideas.

Your could also try Quesco Blanco (https://cheeseforum.org/articles/wiki-queso-blanco-cheese-making-recipe/), but less flavour.

Have fun!

When I make fromage blanc, or American style Neufchatel, I start it at night, ladle the curd in the morning before going to work, and it's ready to eat when I get home. I culture the milk with Flora Danica or MM100, rennet at 6.4 with four drops of rennet per four gallon batch.

Thanks John(CH)   :P I did not review my posting and missed out the word Blanc.
I have never made Queso Fresco so I will give that a try.
It sounds like just what I am after.

dthelmers::::::::::::::  I will have to get up even earlier than 5am, but it should not take very long to ladle it out ready for the arvo 8)

Thanks to both if you will try anything as I love this cheese making.
