Hello,
That Stilton is 8 weeks now.
Now I'm little worried, because it's smell is so strong. When I take Stilton out of box, even Limburger goes to hide under table, I think  8).
It's starting came more reddish, and blue is quite 'shy' on outside. It's feels so different than my earlier blues.
Rind is little sticky. I wonder if it get some b.linens.
I take testing sample and taste was creamy with good blue aroma.

The rind may be a little orange, but the interior looks superb!

That orange rind is stunning,
Mine turned out green-white.

Nice smooth surface aswell.

Hi,
Ok, my Stilton get 15 Weeks now and time to cut open.
It was earlier in too moist box, so I keep lid pit open and it start smell good.
Texture and interior looks good, think.
And taste, its so different than 8 Weeks. It's still creamy and good blue aroma, and after that there come some sharp flavor almost like chili.
So you mouth is like middle of fireworks, this cheese in not bland, that sure  :D
With some jam and port it's works fine.

Yes that cheese trier was good deal. 
Now I have a lot cheese to eat, huh, my wife like only mild tasting cheeses.
Maybe I give some part at my neighbor  :)

Living art. I like the rind as a contrast to the beautiful blue interior. Nice job.
